That looks tasty, even if it does look like a turd. It reminds me of a dish I've made in the past.  chicken breast pounded flat layered with sun dried tomato, pine nut, and Italian seasoning. Rolled and baked. Yummy! You can substitute the chicken with a pork loin if you don't mind trying to cut the loin into a flat piece. You can also add fresh basil into the roll for added flavor.
