For those of you that aren't on FB. I made these last night. They were delicious and fairly easy to make.
It is chicken stuffed w/ sauteed peppers, garlic, & cheese. Then wrapped w/ BACON!

Has anyone seen that cable TV show on Discovery's Destination America channel called the United States of Bacon? This guy travels around the country seeking out restaurants that have unique bacon concoctions on their menu. There are some really creative and crazy recipes featured. The recipe was fairly simple. I sauteed 1 green bell pepper, 1 red bell pepper, some minced garlic, jalepeno's and pancetta. I seasoned it a little w/ some random seasonings. Cubed about half a block of pepper jack cheese Then I took a ladle and lined it with about 5-6 pieces of bacon, put a thin slice of chicken breast firmly inside the ladle and filled it w/ cheese & the sauteed mixture. Then I Wrapped the bacon over the bottom half and baked it for about 20-25 minutes on 350 degrees. I then put the pan on the bottom rack and did a low broil to make the bacon crispy for about 5 5 minutes. Easy Peasy Japanesey
