Re: BACON Bacon Jam
1 pound smoked bacon
4 cloves garlic, chopped
1 med brown onion, sliced thinly
3 tablespoons brown sugar
Tabasco sauce (add to your taste)
1 cup coffee
1/4 cup apple cider vinegar
1/4 cup maple syrup
Black pepper (to your taste)
water
1) Cut bacon into 3/4 to 1 inch pieces. Fry in a non-stick skillet until lightly browned and just beginning to crisp.
2)Remove bacon and drain on paper towel.
3) Remove most of the bacon drippings...leaving just enough to sweat down the onions and garlic. Fry until transluscent.
4)Transfer the bacon, onions and garlic to a heavy based iron pot. Add all the remaining ingred except the water. Simmer for about 2 hours, adding 1/4 cup water every 30 minutes or so and stir.
5) after about 2 hours simmering and reducing down...cool for 20 minutes or so. Place into a food processor and pulse 2-3 seconds at a time until you get a "jam" consistency.
It will now be ready for use...or you can put in a jar and refrig for up to a couple weeks. (hint....bet it doesn't last that long).
Toast 2 slices of bread...put this jam on one side...fry an egg and put on top...add the other slice toast.
